Sobre esta materia tan perecedera, las culturas mediterr\u00e1neas alzaron un comercio muy s\u00f3lido y vigoroso.<\/p>\n<p>Este comercio que tanto auge tuvo desde el siglo 15 al siglo 20 desapareci\u00f3 de golpe debido a un avance tecnol\u00f3gico, la creaci\u00f3n de hielo artificialmente, por lo que muchos dep\u00f3sitos situados en \u00e1reas urbanas desaparecieron r\u00e1pidamente, otros han tenido una r\u00e1pida degradaci\u00f3n, y finalmente otros quedan olvidados y solitarios a las sierras de la Comunidad Valenciana, mostrando a todos sus grandes pozos y paredes.<\/p>\n<p>Las Cavas de la comunidad forman parte de su patrimonio por tres motivos muy claros: como edificios monumentales, como elementos de la arquitectura rural, y como parte de los paisajes monta\u00f1osos valencianos. Algunas neveras, por sus dimensiones y esmerada estructura, son aut\u00e9nticos monumentos y acreedores por ellas mismas, de protecci\u00f3n como tantas otras edificaciones.<\/p>\n<p>Todos los dep\u00f3sitos, incluso los m\u00e1s deteriorados o sencillos, son elementos de la arquitectura rural.<\/p>\n<p>Por \u00faltimo, rese\u00f1ar que estas cavas han potenciado y singularizado de forma desmesurada los parajes donde est\u00e1n ubicadas, a menudo perdidas en las monta\u00f1as.<\/p>\n[\/et_pb_text][\/et_pb_column][\/et_pb_row][\/et_pb_section][et_pb_section bb_built=\u00bb1&#8243;
